Ingredients to make Double Salmon Croquette
8oz/225g cooked, flaked salmon
3oz/75g smoked salmon, chopped8oz/225g cold mashed potato
1 beaten egg
1 tabsp chopped parsley
1 teasp anchovy essence
Salt & Black pepper
4oz/125g cornmeal (polenta)
4oz/125g fresh breadcrumbs
vegetable oil for shallow frying
Directions to make Double Salmon Croquette
Step 1:
Mix all the ingredients together except the cornmeal and breadcrumbs.
Step 2:
Put the cornmeal and breadcrumbs into a zip-lock (or similar) plastic bag.
Step 3:
Divide the mixture evenly into make 8.
Step 4:
Pop each one into the plastic bag and shake gently until covered.
Step 5:
Put them on a plate that’s been covered with cling film and chill for at least 15 minutes.
Step 6:
Shallow fry the croquettes until golden brown.
Step 7:
Serve with tomato sauce and peas or sweet corn.
